Christmas Morning 2010

This is the first Christmas, of the 4 we have spent together, that we actually did things right. We didn't open any of our gifts before Christmas morning and we made sure Santa knew were we live. It was so nice to have a traditional Christmas this year. It is hard to have the same feelings that Christmas used to bring us when we were little now that we are all grown up but, this year we got a little taste of the magical feeling of Christmas.

I just LOVE Christmas!

This year we got spoiled! My parents gave us a Wii and I can't wait to get some exercise games to go along with it. I also got a Keith Urban CD from my mom. Alex got a steam cleaner from his parents and I got a purse filled with goodies from them. Ryan and Valerie had us this year and they got us an awesome Raclette Grill that I can't wait to use! Santa brought Alex some shoes, belts, a movie and some cereal storage containers. I got some kitchen towels, and a razor from Santa. The best gift that we got each other is our new bed. We got that a while ago but, it was the best Christmas present!

This year for Christmas Eve we were able to spend it with my family. I love Christmas at my parents home. We are a very traditional family so it is so nice to see our traditions living on. This year Scott brought some prime rib and it was extremely delicious! We also did our nativity scene with the kids. Dad narrated the story, Hayley was Mary, Tim was the donkey, Corbin was the wise men, and all the girls were the angels. We are missing half our family because Ryan and his family couldn't come up this year because they are expecting a new baby any day now and Andrea and her family are in Alaska so, we were slim on actors but, it was still fabulous! This is my favorite tradition of Christmas. We sing along with the narrations and it is a nice reminder of the meaning of Christmas. I remember it being a lot more reverent when I was little...everyone got a little out of hand this year. :) Several lyrics to the songs were changed to inappropriate things and there was a ton of laughter. We still got the point though. :)

Christmas is such a wonderful time of year. I love my family and the fun spirit they bring to our lives.

Alex's Star Trek Birthday

This year for Alex's birthday I wanted to do something special so I invited his siblings and parents to come down for dinner and cake & ice cream. I decided to do a little Star Trek theme for him so I made him a Cellular Peptide Cake with Mint Frosting. In one of the episodes Data has a dream and in his dream Deanna is made in to such a cake and they eat her so, I decided to put my cake making skills to work. We had so much fun with the family at our house. Alex ended up having a wonderful birthday! Thanks to everyone for coming!

Emily and I had a hard time lighting all 26 candles but, we did it and managed to cover the cake in wax, a delicious addition to the cake. :)

Happy Birthday Alex! I am so glad he is my husband and he worked so hard to get me to marry him. He has such great work ethic and works so hard to provide for his family. He is the best listener in the world and is such a great person. We all love him so much!

My dad

Being that today is Fathers Day I thought I would make a special post for my dad. I love my dad so much! He and I used to fight a lot in high school but, now I look back and he was just trying to protect me. I can always count on him to answer any of my questions about the gospel and he was always such a good example of what I should be doing with my life. I hope that I can always remember the great things I learned from my dad. He tried to teach me lots of things that didn't always fly with me. Like golf....hate it, Changing the oil....too dirty, yard work...too hot and dirty, but, there are things that he taught me that I will never forget. Like how to be funny....Alex always calls me Andy when I tell joke that only I understand, he taught me the importance of going to church...there was a time in my life when I felt I didn't need to go to church and every Sunday my dad would go sometimes by himself because he knew of the importance. He taught me the importance of working, earning money, saving money and living within my means. I could go on and on about what I have learned from my dad.

Am I an Addict?

I have been so addicted to Diet Coke lately! The best part is I have a friend that will encourage my addiction now! We went to get a pedicure and stopped to get a diet coke, we went shopping and had to get a diet coke when we were done! Suzanne is surely the greatest friend in the world! Friends don't let friends go with out a diet coke!

My Birthday Present

My sweet little husband did a good job this year with my birthday! I got flowers at work, a gift certificate to Amazon to get my new Rachael Ray pots and pans, and Twilight and New Moon movie posters to put in my office! He sure loves me I guess! :)

How many of you have a nice enough husband to let you put two really attractive men on your walls? What can I say, I got a good one! :)

Squish Casserole

Long time no recipe, Liz! I know I know, I have actually made a ton of new recipes lately but, just not blogged them or taken pictures of them so, here is one that has been waiting for a while! I got this one from my sister-in-law and it is one of those things that I crave in the middle of the night! If you love squash, you will love this!

It doesn't look that great but, it is yummy! I also should explain that I call squash, squish so, the title of the recipe is Squish Casserole :)

3 pounds of butternut squash
1/4 cup butter
1/2 cup brown sugar
1/2 cup onion, diced
1 tbsp. salt
1/2 cup sour cream or plain yogurt
3 eggs
1/2 cheese, shredded

Cut the squash into cubes, boil until soft—15 or 20 min. Drain and peel skin off and mash. Dice onion and put butter with the onion in a bowl and microwave for 2 minutes. Combine the eggs, sugar, salt, pepper, 1/4c. Cheese and sour cream together. Stir onion mixture into the squash and then add the wet ingredients. Then put it in a 9x13 dish. Sprinkle the rest of the cheese on top and bake at 350 for 45 minutes or until a toothpick comes out clean. Don’t over cook!

For a slightly healthier version use the plain yogurt instead of sour cream. DELICIOUS!!
